Between Tequila, Jalisco and "Lakeside," Jalisco
In December 2007, our REVIEW cover and centerfold was devoted to COFRADIA TEQUILA....probably the best Tequila in the country of Mexico, at least from this writer's point of view.
Tequila used to be an acquired taste, but out of the Agave Hills of Tequila it has become the drink of choice by just about everyone who goes there for a visit. This charming little city is only 70 miles from Lakeside and worth every minute of the two hour drive. It is full of charming and delightful people who make every effort to introduce you to their national product.
Members from the Lake Chapala Society (LCS) discovered what an asset this town and its main product are, and how entertaining a one or two day trip can be. Of course, much of this excitement was stirred up by one of the world's most charming and sincere men, Sr. Carlos Hernandez. Carlos runs the family business of COFRADIA TEQUILA, a gold standard symbol of the territory.
As a salute to Lakeside's 30th Anniversary Chili Cook-off in mid-February, Carlos sent a staff member from his promotional office, as well as his Ajijic Distributor, to share a booth with LCS for three days. COFRADIA became a major hit and the love affair began right in the middle of all the chili excitement. This newly generated enthusiasm was made more vivid so Carlos put his staff to work on a Commemorative Tequila honoring the 2008 Cook-off: AGAVE LOCO, a Pepper cured Tequila! with six extra peppers added to the enjoyment and giving it that extra tasty bite. There is even a guarantee: "If not completely satisfied with Agave Loco Pepper Cured Tequila, return the unused portion to us and we'll drink it!" I ask you, how could you do better?
From the first sip, you will discover something truly unique, reminiscent of Old World Mexico. Based on a secret family recipe, Agave Loco's complex flavor is distinctive because of a "pepper curing" process that releases the oils of six varieties of pepper into the spirit. As the Legend goes, an inquisitive man found a jar of peppers stored in a back room of his grandmother's house. When he opened the jar he found that the aroma was very familiar, but not what he expected. He discovered that the peppers had been stored in Tequila, not vinegar which was the norm. What he found was that not only did the Tequila give the peppers a unique sweet and spicy character, but the peppers actually imparted a "cure" to the Tequila that was exceptional because it added a very subtle pepper flavor to the finished product.
